For over a decade, his four-star flagship eatery has managed to dazzle with unexpected combinations and flavors. His Foie Gras Brûlée is no exception. Died and gone to Jean-Georges, this doozy comes with a warm, caramelized nibble of foie gras, nestled inside a buttery brioche. Never one to let the menu go stale, Vongerichten tweaks this phenomenal dish every few months with seasonal touches, like Pineapple-Meyer Lemon Jam or Dried Sour Cherries with Candied Pistachios and White Port Gelée. Currently, his foie gras brulee is paired with a jam-like strawberry sauce. If you cant’ get a table at Jean-Georges, don’t despair. The Foie Gras Brulée is also offered at Vongerichten’s Nougatine, which shares a kitchen with Jean-Georges, right next door.
