Shopsin’s Chicken Tortilla Avocado Soup

If there were a world record for the most items on a menu, Shopsin’s might take the cake. Especially given its size.  Kenny Shopsin’s eponymously named eatery in the Essex Street Market has over 900 options to be exact, with everything from French Toast Sandwiches to Deep Fried Pancake Quesadillas.  You’d think with a menu this big the food would suffer, but that’s not the case at all. In fact most everything is delicious, particularly the Chicken Tortilla Avocado Soup.  Aside from the broth itself, he makes every bowl fresh to order.  Now, that’s serious soup devotion.  It’s filled with tons of white meat chicken, beautifully browned cabbage, beans, onions and tortilla chips.  There’s sliced hot peppers to make it a little interesting and creamy avocado to cushion the spice a bit.
