Forget apples, pumpkins and (as much as we love them) even concord grapes — because white truffle season has hit New York in full force! Generally sourced from Alba, Italy, the gloriously perfumed, highly prized pale fungi are just waiting to be shaved over pastas, pizzas and more, at refined spots, like Midtown’s Gabriel Kreuther, Chevalier, and Tribeca steakhouse, American Cut…
American Cut: In addition to offering 3 grams of shaved white truffle over any dish (such as Tomahawk Ribeye Chop or Dover Sole) for a $50 surcharge, American Cut is holding a White Truffle and Wine Dinner in its sleek Black Room on November 23rd. For $500 per person, patrons will enjoy fungi-centric courses like Kampachi Crudo with percolated truffle broth, Crab with truffle pansoti, and flaming Chateau Briande with white truffle “rain,” paired with extremely rare wines from Wine Director Mariette Bolitiski. Sounds dreamy, doesn’t it?
363 Greenwich St., (212) 226-4736
Gabriel Kreuther: It’s all about the pasta at Gabriel Kreuther’s eponymous, Michelin-starred restaurant, tossed with chestnuts, fennel puree, soft-poached egg yolk, vin jaunce sauce, and white truffles shaved tableside.
41 W 42nd St., (212) 257-5826
Chevalier: Executive Chef Shea Gallante is offering two truffle-touches dishes at the glittery Chevalier in the Baccarat Hotel; Foie Gras Brioche with Truffled Pullet Egg and Hazelnut Brown Butter, and Foie Gras and Truffle Pain Perdue.
30 W 53rd St., (212) 790-8869
Aldea: Who doesn’t love breakfast all day, especially when it involves truffles? Step into George Mendes’ Iberian-inspired Aldea for dinner, and order Soft Scrambled Eggs with salt cod and crispy potatoes, crowned a slurry of fragrant white fungus.
31 W 17th St., (212) 675-7223
Del Posto: Mark Ladner never disappoints, especially when it comes to lavishing on luxury ingredients the likes of truffles. This fall the menu is riddled with truffles, the likes of Truffled Beef Carne Cruda, Bitter Herbs & Lettuces crowned with truffle dressing, and Bauletti Pasta with Ricotta and Black Truffle Butter as well as Pork Tenderloin with Fermented Apple and Truffled Pan Gratinato.
L’Amico: At Laurent Tourondel’s brand new Italian spot in Chelsea, you’ll find a classic combo of Smoked Ricotta Gnudi slicked with sage brown butter, and topped with a lacy crown of fragrant white truffles.
851 6th Ave., (212) 201-4065
Santina: You can order truffles shaved over pretty much anything you please at the sunny Meatpacking hotspot, Santina, although we suggest sticking with simpler dishes, like the warm, thin chickpea flour pancakes, better known as Cecina, topped with Funghi and Lamb Tartare, or the Guanciale e Pepe or Broccoli & Pecorino Rice.
B & B:Revel in the clever, high-low cuisine at Josh Capon & John McDonald’s chic, Soho tavern, Burger & Barrel, with a White Truffle Burger topped with robiola cheese and white truffle aioli. Did we mention Capon’s won Best Burger at the New York Wine and Food Festival a whopping five times?
