Harold Dieterle meditates on duck several ways at Kin Shop, his very modern Thai restaurant in the West Village. One of the hottest dishes on the menu is the Spicy Duck Laab Salad. Some complain that the Thai at Kin Shop, albeit delicious, is not quite spicy enough. Well, that’s certainly not the case with Dieterle’s Duck Laab. A traditional Thai dish, he cooks ground duck leg and breast meat with chiles, lemongrass, and fish sauce, and then tosses it with long beans, fresh basil, mint, cilantro, rice powder, and pickled red onions. The best part, it’s spooned out on to lettuce cups and you get to eat it with your hands. It does pack a serious punch, so make sure to have some water on hand, and maybe some rice to cushion the blow. If you’re really craving duck, follow up the salad with the Roasted Duck Breast Curry or Hot And Sour Duck Soup.
